Guide to Cooking With The Asado Pizza Oven Plates

A step-by-step guide to wood-fired perfection

You can now cook incredible pizza on your Somerset Grill with our new Pizza Plate system, developed with wood-fired chef James Whetlor.

It’s simple to use and lets you cook right on the firebrick base for unbeatable flavour.

Here’s how to do it, from fire-up to first slice.

Step By Step Guide to Cooking Pizza on a Somerset Grill

🔥Heat Up Allow 45 minutes to 1 hour from lighting to cooking your first pizza.

1. Start with the Setup

Before you light anything, put the Pizza Plates in place.

Start with the centre plate, then add the left and right.

2. Lighting the Fire

You’ll need heat from both the bricks and the back.

  • First fire directly on the fire bricks.
  • Second fire in the Ember Maker.

Use the top-down method for both –

It’s clean, efficient and gets things burning evenly.

3. Building Heat

Once the ember bed has formed on the bricks,

lower the pizza plates down to door height.

Now wait. Let everything come up to temperature.

4. 🌡 Temperature Check

After 45 mins to 1 hour from lighting,

Use an infrared thermometer to check the fire brick temperature.

You want a consistent 250–280°C across the base.

5. Time To Cook A Pizza

Move the embers to one side of the oven to creating a space for your pizza.

Top tip – keep some small flames going by adding a log.

It boosts the heat and gives your crust that beautiful blister.

Need more space?

Use the pizza paddle to move embers back into the ember maker.

This gives you room and helps heat the back of the plates.

Put your pizza in and close the door

7. Timing

After 3 minutes, check your pizza.
Spin it if needed for an even cook.

After another 3 minutes, open the door and serve if ready.

8. Keep the Heat Going

After a few pizzas, the temperature may drop.
Lift the pizza plate, restock embers from the ember maker, and repeat.

⭐James' Top Tip

Use semolina flour when spinning your pizza. It acts like natural ball bearings – stops sticking and keeps things moving.
