Grilled Peach Mess

INGREDIENTS:

4 fresh peaches, halved and stone removed

300ml double cream

2 tsp caster sugar

6 meringue nests, shop-bought or homemade

A handful of fresh mint leaves, torn

Method

  1. Light your charcoal or wood 30-45 minutes before you want to cook, and build a medium bed of embers under the V Grill.
  2. Hold your hand 10cm above the embers. You're looking for 3-4 seconds: medium-high heat for grilling the peaches.
  3. Place the peach halves cut-side down on the V Grill and cook for 8-10 minutes, turning occasionally, until fully soft and starting to collapse.
  4. While the peaches grill, whip the cream with the sugar in a bowl until soft peaks form. Set aside.
  5. Transfer the soft, charred peaches to a board and roughly chop into bite-sized pieces.
  6. Crush the meringue nests in a bowl into a mix of small bits and larger chunks.
  7. Fold the chopped peaches and whipped cream through the crushed meringue.
  8. Spoon into serving bowls and scatter with torn mint leaves. Serve immediately.

Top Tip: Pull the peaches off just as they collapse rather than waiting for full char. Too far and they lose their shape when chopped.
