I've have been asked a few times what is the best wood for live fire cooking so I thought it would be good to share my thoughts.
The main thing is to make sure that you're using hardwood logs with low moisture content, keep away from softwoods or wet wood you won’t get the right heat.
I tend to use beech or ash from a local company called the Log Store Group who supply restaurants in the south west, they do a 12" ash pizza oven batons that burn really well and makes amazing embers.

For a local supplier, the best way is to find a local pizza restaurant with a wood-burning oven and have chat with them, they will know the best local suppliers.
